Homemade Jell-o Pudding Pops

The idea to recreate a favorite treat from my childhood began when I decided to make homemade popsicles for our post-wedding party last weekend. I had seen some yummy-looking recipes in Bon Appetit magazine and wanted to give them a shot. It got me thinking about those delicious, creamy Jell-o pudding pops and I wondered if they were even sold in stores any longer. Well, they’re not. So I relied on my old pal, Google, to help me find the best copy-cat recipe and found it on Mommy’s Kitchen

I mixed vanilla and chocolate (the swirled pops were my fav!) and they came out better than I expected! I was so excited to try one that I had half a pop for breakfast the next day… it was like being a kid again :) The taste was pretty darn close to the real thing and they were a big hit at the party! 

So now I must share the recipe with you all - I made a few minor notes in addition to the recipe from Mommy’s Kitchen. Enjoy!!

Homemade Jell-O Pudding Pops

1 large box (5.1 oz) Jell-O Cook & Serve Pudding (any flavor)
3 - cups cold 2% milk
3/4 cup thawed Cool Whip Whipped Topping
Popsicle Sticks
small Dixie or paper cups (I used 3 oz. paper cups which made about 20+)*

Follow package directions on the back of the pudding box.

When pudding is cooked, cool slightly (I let it sit off the heat for about 2-3 minutes).

Add whipped topping and stir until smooth.

Let pudding cool down (I let it cool for about 5 minutes so it thickened up), then pour into small paper cups.**

Insert a Popsicle stick into the middle of each cup for a handle.***

Place the cups in a 9x13 in glass pan (a cookie sheet will work too – if it fits in your freezer)

Freeze pops for 5 hours or until firm. Peel off paper and enjoy!

 

*The original recipe called for the bigger, 5 oz. paper cups, but I think the 3 oz. ones I used were the perfect size.

**I used a measuring cup with a spout to make this a less-messy process!

***To swirl two flavors, I used the popsicle stick to lightly swirl the bottom flavor up with the top layer and then inserted it into the middle. This worked perfectly.
